Something Sweet for Tulsa!

Garden horticulture staff are working on planting about 2,000 sweet potato "slips" (rooted cuttings) in the bevel-shaped bed just behind the visitor center.  A total of 5 varieties are being planted in the 5,300 square ft. bed including: 'Beauregard', 'Georgia Jet', 'Jersey Yellow', 'Hernandez' and 'White Triumph'.  In the fall an estmated 500-800 pounds will be harvested and cured to be donated to local food pantries and community organizations.

Come out and see the sweet potatoes as they grow over the summer!   A special thanks to Marianna Wetherill, Ph.D. and the Culinary Medicine team at OU-TU School of Community Medicine for sharing these sweet potato recipes--give them a try!
